- Hello and welcome to my blog :) this is officially my first post! It's going to be a quick and easy one. A tuna salad! I was never a big fan of tuna until one day my mom made it with mayo and corn served with saltine crackers. It was delicious but all that mayo just wasn't heathy, so I decided to adapt the tuna salad and turn it into something just as delicious but healthy this time! ;) hope you guys like it! It's great for lunch and on the go.
Ingredients: A can of tuna
(I used starkist chunk light tuna in water)

Iceberg lettuce (about two cups chopped)
Half an avocado
1 Serrano pepper
1 small tomato
About 2 tablespoons of chopped cilantro
Half a red onion
Whole wheat crackers
(as many as you'd like but watch your intake)

Instructions: First chop up your iceberg lettuce, serrano pepper, onion, tomato, and cilantro. Open your tuna and drain the water. After its drained put it a bowl a long with all the chopped veggies (except your iceberg lettuce). In a separate bowl line the bottom with your lettuce, once you have the bottom filled transfer the tuna and veggie mix to the center of your lettuce bowl. Last but not least mash up half an avocado and place on top. Don't forget to squeeze your lime over your salad, plus sprinkle a little pepper and enjoy with or without some crackers :) thank you for reading and enjoy
One last note if you don't like spicy stuff try substituting the Serrano pepper with jalapeƱo or no peppers at all :)
