Banana Apple Nut Smoothie Bowl




Today's post is about Smoothie bowls! It's a smoothie in a bowl ;) lol if you follow me on Instagram or pretty much follow any health food page on IG you've probably came across a smoothie bowl. Which is basically just a pretty smoothie. If you don't have time to sit down for a smoothie bowl feel free to throw all these ingredients in a blender and into a cup on your way to work or school! So smoothie bowls are a thing and I've made my share of them lol. Ready or not it's smoothie time y'all!

Ingredients: 1 red apple
1 fairly sized frozen banana
1 kiwi
1 pear
About 2 black berries
1/8 cup of slices almonds
Half a lime squeezed
1/4 a cup of shredded of coconut

Garnish: coconut (as much as you desire)
3/4 black berries (or more if you desire)
Rice Krispies cereal (again as much as you desire)
Sliced almonds ( & you guessed it as much as you desire lol)
Half a kiwi sliced thin and in triangular slices




Instructions are pretty simple today you basically blend all your ingredients in your blender. After you add it to your bowl and top it off with coconut, black berries, Rice Krispies, almonds, and kiwi. Don't feel limited to these garnish ingredients feel free to top it off to your liking.

Tip: start by topping your bowl with the ingredients that weigh less like the cereal or almonds and work yourself down to the heaviest which would be the black berries.

Broccoli cups

Say cheeeeeeesssssseeee! Broccoli and cheese that is ;) today's recipe includes just that! Some people call it broccoli tots, I call them broccoli cups. Whatever you want to call them is fine with me, because you'll love them either way. I made these today as a side for an early dinner, but you can have them for lunch as well. Grab your muffin/cup cake pans and let's get started y'all. 

Ingredients: 
broccoli (about 3 cups)
1 cup of Shredded cheddar cheese
1/2 cup of bread crumbs (I used a wheat French bread from Walmart)
1/3 of chopped onion
2 organic eggs (I got those from my backyard lol)
Salt & pepper
Low fat shredded mozzarella cheese

Note: if you prefer a different cheese go ahead and substitute my cheeses for your favorite or add on any cheese you'd like. Don't be afraid to make it your own.

Instructions (pictures for a better understanding can be found at the bottom): 

First preheat your oven to 400, but  if you come from a Hispanic family like I do your mom probably has it full of pots and pans lol so make sure your oven is cleared first.

Now grab your broccoli florets and boil them for about 5 minutes with a bit of water and add a little salt and pepper to them.

Set the broccoli aside to cool, once it's cool set down some paper napkins and let your broccoli drain and then chop it up as finely as you want. 

Grab your French bread or whatever you have on hand and break it into small pieces make sure you get at least 1/2 cup. 

At this time let's grab a bowl and put the bread crumbs in along with your chopped up broccoli, 2 eggs, 1/3 cup of chopped onion, and 1 cup of shredded cheddar cheese. Season with salt and pepper to your liking, Stir it all together and let it mix!

Your probably thinking what about the mozzarella? That'll come in a bit! For now grab your muffin pan and fill them up with the mixture, filling each one as evenly as you can. When you get done filling all your cups spread a little mozzarella on top of each cup.

Now put them in the oven for 15-20 minutes (or till they look a little golden/brown at the top), when you remove them make sure and run a spoon, butter knife or something all around the broccoli cup to make removable easier :) serve with your favorite dish!



Coconut citrus water





Hey y'all :) since spring is right around the corner I'm sharing something colorful and refreshing! I for one always ran to grab a type of soda or a juice loaded with sugar when I'm thirsty. Now I'm trying to change that bad habit so I started drinking more water, but come on guys water is just water and it gets boring. So let's try adding a little flavor to that water.

Ingredients: 
2 oranges
 2 lemons
  1  lime 
 1 calamansi lime
  1 large grapefruit
 One can of coconut water
      (I used harmless harvest 100% raw coconut water)
     & Water duh ;)

Instructions: grab a large pitcher and fill it with water but leave some room for the can of coconut water. Mix the water and the can of coconut water. Cut one orange in half and squeeze that whole orange in the water do the same for one of the lemons. Now cut up your lime, grapefruit, calamansi lime, the other orange, other lemon and drop them in your coconut water mixture. Put your pitcher in the refrigerator and let the fruit infuse the water, the longer you wait the better it'll taste . 
Serve with  ice:)


Tuna salad

  • Hello and welcome to my blog :) this is officially my first post! It's going to be a quick and easy one. A tuna salad! I was never a big fan of tuna until one day my mom made it with mayo and corn served with saltine crackers. It was delicious but all that mayo just wasn't heathy, so I decided to adapt the tuna salad and turn it into something just as delicious but healthy this time! ;) hope you guys like it! It's great for lunch and on the go. 

Ingredients: A can of tuna
                    (I used starkist chunk light tuna in water)
                   Iceberg lettuce (about two cups chopped)
                   Half an avocado 
                   1 Serrano pepper
                   1 small tomato
                   1 lime
                   About 2 tablespoons of chopped cilantro 
                   Half a red onion 
                   Whole wheat crackers
                (as many as you'd like but watch your intake)
                   Pepper







Instructions: First chop up your iceberg lettuce, serrano pepper, onion, tomato, and cilantro. Open your tuna and drain the water. After its drained put it a bowl a long with all the chopped veggies (except your iceberg lettuce). In a separate bowl line the bottom with your lettuce, once you have the bottom filled transfer the tuna and veggie mix to the center of your lettuce bowl. Last but not least mash up half an avocado and place on top. Don't forget to squeeze your lime over your salad, plus sprinkle a little pepper and enjoy with or without some crackers :) thank you for reading and enjoy

One last note if you don't like spicy stuff try substituting the Serrano pepper with jalapeƱo or no peppers at all :)
